Pani Puri or Golgappa is one of fast food that everyone loved from childhood. No one can deny to Pani puri when offered. It is the best street food that we enjoyed with our family and friends. At my hometown, we call it Patasi or Tikiya.
Now let me introduce you with Pani Puri. Here pani translate to water and the puri is fried puffed crispy balls. The pani is tangy and spicy. We can also add a sweet tamarind chutney (Saunth) to make it balanced. This pani is added to the puri along with filling of boiled potatoes, onions and moong sprouts also we can use a thick dry curry made from white peas (boondi).
Till now you have eaten them on the stalls only but these are easy to make at home too. So today we are sharing the easy Pani Puri recipe to make at home.

Ingredients:
For Pani:
- Mint - 20 grams
- Coriander - 15 grams
- Green chili - 4
- Himalayan salt - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Asafoetida - 1/8 teaspoon
- Cumin - 1/2 teaspoon
- Water - 530 milliliters (divided)
- Dry Mango Powder - 2 teaspoons
- Boondi - 10 grams
For Puri:
- Semolina - 50 grams
- Oil 125 ml
- Hot water - 375 ml
For Stuffing:
- Boiled mashed potatoes
- Moong sprouts
- Saunth chutney
- Chopped onions
- Boiled black chickpeas
- Coriander
- Sev
PREPARATION:
Pani
- Put mint, coriander, green chili, teaspoon Himalayan salt, 1/2 teaspoon salt, 1/8 teaspoon asafoetida, cumin and 30 milliliters of water in a blender.
- Blend until all the ingredients mix well.
- Take this mixture into a bowl add 500 ml of water, 2 teaspoons dry mango powder, boondi and mix them well.
Puri
- In a big bowl add 500 grams semolina, 125 ml oil and mix well.
- Add 375 ml of hot water. Bring the mixture together and knead into a bind stiff dough.
- Make patties of the dough into the circle to about 1-2 mm.
- Do not roll the patties very thin or very thick.
- Now make small round puris by cutting it using a round shaped small lid.
- Now heat some oil in a pot, dip 5-6 puris gently into the pot. (Remember do not drop them together - do it one by one)
- Deep fry the puris until they turned crispy and light golden brown.
- Take them out in a different bowl.
Assembling Pani Puri
- Crack the puri from the top with a spoon. Add boiled mashed potatoes, moong sprouts, saunth chutney, chopped onions, boiled black chickpeas, coriander, sev.
- Dip the puri into the pani.
- Get lost in the world of joy. Yummy!
