The Samosa looks so difficult to make but when you follow these steps you will make an expertise in making them. So today we will learn how to make crispy, delicious, deep fried and mouth watering Samosas with Green Chutney which makes it tastier.

Ingredients:
For Covering (Outer Layer)
- 1.5 cups of Maida flour
- 1 tsp carom seeds (ajwain)
- 3 tbsp ghee/oil
- Salt (according to the taste)
For Potato Filling
- 3 medium sized potatoes
- 1/2 cups of green peas (mutter)
- 1/2 tsp cumin seeds (jeera)
- 1 tbsp green chili-ginger paste
- 1/ 2 tsp red chili powder
- 1 tsp coriander powder (dhaniyan)
- 1/ 2 tsp garam masala powder
- 1 tsp lemon juice
- 1 tsp fennel seeds powder (saunf)
- 2 tbsp coriander leaves (finely chopped)
- Salt according to taste
- Oil for deep frying
How to make the recipe:
- Boil potatoes and green peas in the pressure cooker with salted water.
- Transfer them into the colander (chalni) and set them aside.
- To prepare dough for the outer layer, add Maida flour, carom seeds, oil/ghee, and salt in a platter (paraat). mix all the ingredients with the hands and knead them to form a hard dough. Cover it with a wet cloth and keep aside for 15-20 minutes.
- Now, for filling, heat a pan put oil, cumin seeds and green chili-ginger paste in it . Stir and cook for a few minutes.
- Now, add boiled green peas and messed potatoes, red chili powder, coriander powder, garam masala powder, lemon juice and fennel seeds powder.
- Now Stir the mixture well until it smells good. Add some coriander leaves and keep aside.
Making Cones:
- Remove the wet cloth from the dough and make round shaped balls of it.
- Take one ball, slightly press it between your palms and put it on a rolling board, roll it out into a round shaped with a rolling pin.
- Cut it into two semi-circles and spread water with a finger on the edges.
- Take one semi-circle and give it a shape like a cone by folding it from both the sides.
- Fill the cone with 2-3 tbsp of potato masala and wet the edges from the fingers and press it tightly with your thumb to seal them.
- Finish all the cones making like this.
Frying Samosa:
- Heat some oil in the pan until medium hot that a piece of dough must gently rise not immediately.
- Add all the cones in the oil and fry them until they turn brown. when half fried you can increase the flame also.
- After deep fry take them out and keep on a paper or tissue.
- Serve them hot with Green Chutney or Tomato Sauce.
Baking Samosa in Oven:
- Preheat the oven at 170 C for 20 Min.
- Police some oil on cones and bake them for 35 40 Min.
- Serve hot with Tomato Catchup or Green Chutney.
